Ingredients
- 1-1/4 lbs cod
- 3 tbsp all-purpose flour
- 1 tsp kosher salt
- 1/4 tsp fresh ground black pepper
- 2 tsp oil divided
- 1 tbsp + 2 tsp. unsalted butter divided
- 1/4 cup lemon juice
- 1/4 cup white wine
- 1 tbsp capers
Instructions
- Place flour in a shallow plate and stir in salt and pepper.
- Dredge both sides of the fish in the flour mixture.
- Heat a large non-stick skillet over medium-high heat with 1 tsp. oil and 1 tsp. butter.
- When the oil is hot, add half of the fish. Cook for 4 to 5 minutes on each side. Place on a plate and keep warm.
- Add another teaspoon of oil and butter.
- Cook remaining fish for 4 to 5 minutes per side. Place on the plate.
- Add lemon juice and wine to the skillet. Bring to a simmer.
- Add the capers and simmer for 1 minute.
- Stir in remaining tablespoon of butter and serve.
